  • 1/4 cup of water

Instructions:

1. Soak the spring roll wrappers in water for 30 seconds until they are pliable enough for rolling. If you soak them for too long, the wrappers will tear.

2. On each wrapper, place a small amount of vermicelli noodles, julienned carrots, cucumber, red bell pepper, cilantro, mint, and basil leaves.

3. Roll up the wrapper until the filling is covered, then tuck in the sides and continue rolling until the wrapper is sealed. Repeat until all the wrappers and filling are used up.

4. In a small bowl, whisk together the peanut butter, soy sauce, honey, ginger, and water until smooth.

5. Serve the spring rolls with the peanut sauce for dipping. Enjoy!
