  • 3 tablespoons meat curry powder
  • 1 teaspoon turmeric powder
  • 1 teaspoon chili powder
  • 1 teaspoon salt, or to taste
  • 3-4 cups water
  • 2 potatoes, peeled and cubed
  • 1 carrot, peeled and diced
  • 1 tomato, diced
  • 2 tablespoons chopped coriander leaves, for garnish

Instructions

  1. Heat the oil in a pot or wok over medium heat. Add the cinnamon stick, cloves, cardamom pods, and star anise and sauté for 1-2 minutes until fragrant.
  2. Add the diced onion, minced garlic, and ginger paste and stir-fry for 1-2 minutes until the onion is translucent.
  3. Add the chicken pieces and sauté for 5-6 minutes until browned.
  4. Add the meat curry powder, turmeric powder, chili powder, and salt and stir-fry for 1-2 minutes until fragrant.
  5. Add 3-4 cups of water and bring to a boil. Reduce heat to low, cover, and simmer for 30 minutes.
  6. Add the cubed potatoes, diced carrot, and diced tomato and simmer for an additional 20-25 minutes until the vegetables are tender and the curry has thickened.
  7. Garnish with chopped coriander leaves and serve hot with steamed rice or roti canai.
