Ingredients:

- 500g of ground chicken

- 1 egg

- 1 tablespoon of cornstarch

- 1 tablespoon of soy sauce

- Salt and pepper to taste

- 2 tablespoons of oil

- 1 onion (chopped)

- 3 garlic cloves (chopped)

- 3 tablespoons of curry powder

- 2 potatoes (peeled and diced)

- 1 carrot (peeled and diced)

- 3 cups of chicken broth

- 250g of egg noodles

Instructions:

1. Mix ground chicken, egg, cornstarch, soy sauce, salt and pepper together in a bowl. Shape into 25 meatballs and set aside.

2. Heat oil in a pot on medium heat. Add onion and garlic and cook until fragrant.

3. Add curry powder, potatoes and carrots. Cook for 2 minutes.

4. Add chicken broth and coconut milk. Bring to a boil.

5. Add meatballs to the pot and reduce heat to low. Simmer for 15 minutes or until meatballs are cooked through.

6. Cook egg noodles according to package instructions. Drain and set aside.

7. Serve mee kari in bowls, topped with egg noodles and a lime wedge.
