Ingredients:

  • 300g spaghetti
  • 4 slices turkey bacon or beef bacon, cut into bite-sized pieces
  • 3 cloves garlic, minced
  • 1 red chilli, sliced (you can use more or less depending on how spicy you like it)
  • 1 stalk lemongrass, thinly sliced
  • 2-3 kaffir lime leaves, torn into pieces
  • 2-3 tbsp olive oil
  • 2 egg yolks
  • 1/4 cup grated parmesan cheese
  • Salt and pepper to taste

Instructions:

  1. Cook spaghetti according to package instructions until al dente. Drain and set aside.
  2. In a pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
  3. Add turkey bacon and stir-fry until lightly browned.
  4. Add sliced chilli, lemongrass and kaffir lime leaves. Stir-fry for another minute or so.
  5. Add cooked spaghetti into the pan and toss everything until well combined.
  6. In a bowl, whisk together the egg yolks and grated parmesan cheese. Pour the mixture into the pan and quickly toss everything together until the spaghetti is coated in the egg mixture.
  7. Season with salt and pepper to taste. Serve hot and enjoy!

This recipe is perfect for those who love a good spicy kick in their pasta dishes. The combination of tomyam and carbonara may seem strange at first, but trust me, it works really well together.
