  • 200g of seafood tofu
  • 4-5 stalks of lemongrass (smash with a knife)
  • 5-6 slices of galangal (smash with a knife)
  • 2-3 kaffir lime leaves
  • 2 tomatoes (quartered)
  • 1 onion (quartered)
  • 4-5 bird's eye chillies
  • 3-4 tablespoons of fish sauce
  • 2-3 tablespoons of lime juice
  • 1 tablespoon of sugar

Instructions

  1. Fill up a steamboat pot with 1 litre of water and boil over high heat.
  2. Once the water starts to boil, add in the lemongrass, galangal, kaffir lime leaves and bird's eye chillies. Let it simmer for 5-10 minutes to allow the flavours to infuse into the broth.
  3. Add in the chicken, prawns, fishballs, seafood tofu, tomatoes and onion into the pot. Let it cook for 10-15 minutes or until the meat is fully cooked.
  4. Season the broth with fish sauce, lime juice and sugar based on your personal preference. Do a taste test to ensure that the broth is flavourful and balanced.
  5. Serve the tomyam steamboat with a side of rice or noodles if desired.
